The world’s best hotel restaurants — and one is in a random upstate NY field

If you can bake it here, you can bake it anywhere.

The hotel restaurant is not the last “resort” when dining in the Empire State.

Travel + Leisure’s inaugural hospitality rating series “The Checkout” ranked two New York entries among the 25 best new hotel restaurants and bars for 2026.

Coincidentally, both of these inn-credible entries are located north of Westchester, proving that upstate cuisine is more than just tannic pot coffee and foamy flapjacks.

First up was Serre, a gourmet nook located in a glass conservatory in Hudson’s boutique Maker Hotel, just a two-hour’s drive north of NYC.

This hotel hotspot is the brainchild of chef Jonas Offenbach, an alumnus of the famed Gramercy Tavern who envisioned Serre as a culmination of everything he learned during his travels and career.

The result is a rotating mosaic of French-inflected seasonal dishes such as warm potato dauphine topped with cool mackerel and horseradish and East Coast oysters accentuated with black plum and elderflower vinegar.

“I’m obsessed with the idea of contrast right now,” Offenbach declared. “In temperature, in flavor, in thinking.”

Also making NY travelers’ stays more flavorful is the Fields Restaurant in Fields Resort & Spa, Curio Collection by Hilton.

Situated in the uppercrust enclave of Skaneateles — where properties can run upwards of $20 million — this restaurant stays true to its local roots by sourcing ingredients from the surrounding region and elevating them with French and Italian techniques.

Chef Esparanza Guzman’s specialties include a bronzed chicken aged for two days with koji (fermented rice powder), and a refreshing fennel-and-greens salad adorned with edible flowers picked right outside the restaurant.

These are washed down with wines exclusively sourced from the Finger Lakes region.

These NY eateries occupy rarified air alongside the likes of Amber Terrace, the new cocktail bar and restaurant at the Leela Palace in Jaipur, and Marcus Samuelsson’s eponymous restaurant in the Morrow Washington DC, Curio Collection by Hilton.

Travel & Leisure experts compiled the elite 25 from a staggering 120 hotel restaurants and bars (including cruise ship and train dining halls), spanning 17 countries.

Their conclusion was that “hotels have seriously upped their culinary game.”
