From servers’ awkward hovering to clearing a plate: Restaurant etiquette to expect on a night out

Your empty dinner plate may be disappearing faster than etiquette says it should.

Traditional dining etiquette calls for restaurants to wait until everyone at a table has finished eating before clearing the plate.

But many contemporary restaurants clear plates individually, creating an awkward question for diners: Is the server simply being attentive or are you being hurried out?

“Everyone at the table should be finished before all the plates are cleared,” Jacqueline Whitmore, Florida-based founder of the Protocol School of Palm Beach, told Fox News Digital.

Salar Sheik, who runs Savory Hospitality Restaurant Consulting in Los Angeles, said diners shouldn’t automatically interpret a cleared plate as a hint to leave.

“Clearing a plate is not necessarily an attempt to rush the guest or turn the table,” Sheik told Fox News Digital. “Often, the server is simply trying to keep the table tidy, maintain the flow of service and prepare for the next course.”

Knowing exactly when to clear a plate, however, requires some finesse.

Sheik said servers may look for cues such as a diner pushing a plate away, putting silverware together, sitting back from the table or looking around for the server when little or no food remains.

“We train the best service professionals to read the guest’s body language, pace and overall energy to determine when it is appropriate to approach and clear a plate,” Sheik said. “This is a subtle skill that only a small percentage of staff members truly master.”

Getting it wrong can have exactly the effect diners suspect.

Repeatedly hovering or trying to remove a plate while someone is still eating “can make the guest feel rushed and is a sign of poor service,” Sheik said.

There are ways diners can signal whether they’re finished, Whitmore said. Crossing a knife and fork on the plate indicates that a customer is still eating or resting, the etiquette expert said. Placing the utensils side by side at roughly the four-o’clock position indicates the meal is finished.

Sheik also points to silverware as a cue, though he cautions that such signals aren’t completely universal. Customs can vary among countries and restaurants, he said.

The simplest solution may be to skip the guesswork altogether.

“If there is any doubt, the server should always ask, ‘May I clear this for you?’” Sheik said.

While restaurants shouldn’t make customers feel rushed, diners have responsibilities, too.

There is no universal limit on how long a party should occupy a table, Sheik said. It depends on factors including the restaurant, size of the party, waiting reservations and whether a specific dining time has been communicated, he said.

Whitmore’s advice is similarly situational: “Read the room.”

If diners are lingering while a line of customers waits for a table, they should be mindful of those around them. If no one is waiting, she said, they should “go ahead and enjoy” themselves.

Ultimately, good service may depend less on decoding a diner’s body language than on five simple words: “May I clear this for you?”
